So now it is summer again. With the longest day gone it means that we are heading back to winter but that seems a long way to go. In the meantime we can enjoy the garden and the bounty of nature. I was picking rhubarb last week and made my famous rhubarb and vanilla jam. I must say that the harvest doesn't seem so plentiful but I managed to get 5 jars of jam. I actually left a few stalks for a rhubarb crumble which is always a treat. 


Rhubarb is not only a wonderful vegetable, yes, well botanically it is a vegetable even though we prepare it mainly in a sweet way. The only part of the plant which is edible are the stems because the rest of it is quite poisonous. It contains high amounts of oxalic acid. Even though rhubarb with its tart, refreshing flavour is rather tasty it doesn't hold many health benefits apart from a considerable amount of vitamin K.
