Autumn Time - Harvest Time
I had a glut of apples this year from various trees. Deciding about what to do with all the fruit I was going to make my own cider vinegar this year. So after pressing the juice out of the apples for hours on end I had 3 litres of cloudy apple juice which ended up in a huge Killner jar. Covered with a cheese cloth, I left it to do whatever it liked to do, occasionally stirring it. It went through a phase where it was really fizzing, almost to an extent where it was threatening to overflow the jar. Now it developed a distinct vinegary smell but I think it is still far away from being ready to use.
The interesting thing about about apple cider vinegar is that all the goodness which is in the apples is in the vinegar as well. It contains a lot of potassium, minerals, trace elements, vitamins and acidic and other acids like lactic and citric acid. The acidic acid is fermented alcohol and gives the vinegar it sour taste but apart from that it also is responsible for the antibacterial and conserving properties if the cider - or any vinegar. Think about pickles.
Apple cider vinegar is not only good to use in salad dressings, it can be used in drinks and marinades. Apart from culinary uses it can be used for personal hygiene as well. Cider vinegar in the last rinse when you wash your hair makes it shiny and soft. It can also be used in facial masks and peelings and washing the body with cider vinegar water on a hot day helps to keep you cool.
But apple cider vinegar can do even more. It soothes a sore throat when gargled with in a glass of warm water. Mixed with honey it even helps to calm down a cough. It aids the digestion and helps to keep a healthy gut.
There is also a homoeopathic remedy made out of vinegar which is called acidic acid. It is used for severe heart burn or a sour regurgitation during pregnancy. It also antidotes the effects of anesthesia with memory problems or chronic fatigue.
Another use of this homoeopathic remedy is for haemorrhages after labour or excessive menses. Acidic acid is not one of the polycrests in Homoeopathy, meaning that it is not a remedy for many uses. Nevertheless I used it in my practice with a lot of success.
