On The Rise
When I was young I had cooking lessons in school. At the first session our teacher asked if anybody was allergic to something and we all started to shout out that we don't like sprouts, savour cabbage, fish and other things but our teacher interrupted us saying that this was not what she meant. She didn't want to know if there is something we would prefer not to eat, she wanted to know if somebody actually couldn't eat something specific. This was a completly foreign concept to us. So after she stopped us all shouting about, one of the girls put her hand up and said that she couldn't eat strawberries. We were very curious about what would happen to her IF she actually ate strawberries and she said that she would get a rash on her face, and that was it. She was one out of 35 children.
Nowadays the picture is slightly different, well, actually quite a lot different. In recent years the need for epipens or other adrenalin carrying devices rose to a point where there was a shortness of supply. Many of those pens actually go out of date unused but the person suffering from a severe allergy should be nowhere without it.
We read all theses horror stories in the papers about children and teenagers dying from anaphylactic shock after eating sesame or dairy as a hidden ingredient.
Allergies are on the rise and they are getting more and more severe. We are far away from the red rash. On top of that, a lot of people suffer from multiple allergies instead of just one thing. Not only that, allergies are on the rise, more and more people seem to be intolerant of certain foods.
I'm quite sure that there are many reasons for this but the fact remains that the body is really sick if you are intolerant or allergic to food. You need food to nourish your system and to survive. Food is one of the essentials to survival.
Humans are omnivores because of the need to survive in times when food is sparse, like in winter. This is not necessary anymore. We do not live in caves anymore and due to modern growing and storage methods most of us in the western world have plenty of food to chose from all year round. It seems tragic that there are so many of us who cannot enjoy this anymore.
Leaving food out of your diet might no be the answer. People get more sensitive by doing that and so even tiny amounts of the allergen can trigger a reaction. Some schools and nurseries are going nut free to accommodate the needs of these sensitive children for whom opening a bag of peanuts on an aeroplane might be a death sentence.
People get tested for allergies and the list of foods they have to avoid gets longer and longer, the more you cut out the more sensitive you become. Not being able to eat out anymore is the least problem. I often get asked if I do allergy testing to help. I do understand that people want to know what makes them sick and they are happy to avoid the things which trigger their symptoms. I do not do allergy testing. Avoiding the foods which trigger your symptoms might get you symptom free but you still having the underlying problem. Leaving out gluten doesn't repair your intestines. Your problem is still there and it might raise its ugly head at any time.
